snack of the moment: roasted, crunchy chickpeas

chickpeas are one of our favorite foods — in salads, soups, as hummus, or falafel. the girl is also a major snacker; something she’s tried to curb lately, but when we found a new (crunchy!) use for these guys, she had to indulge. this is so simple a two year old could do it (but you should probably do the oven part).

these crunchy chickpeas are even settlers of catan approved.

Our “Plated” Review

ads for boxed meal deliveries have inundated us online — facebook and instagram are full of them. the pictures look beautiful, but i’ll admit we was more than a little skeptical; first, that the produce and meat delivered to us would look as good as they do on the websites (i mean, when have you ever seen a big mac that looks like the advertisements?) and second… that the meal would be good at all.

we looked into plated, blue apron and hello fresh. we didn’t want to make a massive investment into something we weren’t sure about — so we went with the one that was the cheapest off the bat. we paid just $24 for three meals for the both of us. we thought $24 was an amount of money we’d be happy to throw away if it turned out to be a bust, but thankfully it didn’t. overall, we were really happy, and if you like what you see and want to try it out: there’s a link at the end of this post you can click on to get the same deal.

10+ inches, -18 degrees

we’ve lived in a snow globe for the last five days. we’re teetering on a foot of snow, with six to eight more inches coming in the morning. it’s 50 degrees below freezing. “brrrr” doesn’t even begin to cover it.

smoothie talk

ever since we got the vitamix, we have been making so many smoothies. they really are the perfect breakfast. and they’re a pretty easy way to cut back on unnecessary carbs and calories. our pre-smoothie breakfasts (and, okay, our weekend breakfasts, too) are so sugary or carb loaded there was no way we’d drop a pound. chocolate filled croissants, cinnamon pancakes, last night’s dinner leftovers served on top of potato hash. it’s hard to cut out food that’s so delicious – but, we’re trying. and every little bit helps.

guys. i have a major problem. what you’re about to see is likely the tenth batch of cinnamon chip cookies i’ve eaten this winter. not that i’m getting married in a strapless, sleeveless wedding dress in the next few months or anything… but how long do you have to spend on the elliptical to burn these babies off???

post-christmas wishlist

since we got engaged, we’ve had to do a lot of gift registering. we thought that would be the fun, easy part. who doesn’t want to pick out gifts for other people to buy them?! we were so wrong. it was super difficult, because we just don’t know where we’re going to live after the chef graduates from medical school. it could be houston, it could be new york city; it could be a four bedroom house with a lots of storage or a one bedroom apartment with no kitchen cabinets. anyway, here are a few of our favorite registry items, that we know we can use wherever we end up – and if you have some extra christmas cash to spend, we think this would be the perfect way to spend it.
